Conrad Koh Samui’s Two New Culinary Superstars Create the Island’s Hottest New Dining Destination

The newest resort in Hilton Worldwide’s global luxury brand portfolio, Conrad Koh Samui which is scheduled to open September 1, has announced the appointment of its two executive chefs, Konrad Inghelram as the resort’s Executive Chef and Joe Diaz as Executive Sous Chef. 

The pair who both worked together at one of London’s top restaurants, Quaglinos, as well as having accrued decades of experience from celebrated restaurants around the world, look set to establish Conrad Koh Samui as the island’s hottest new dining destination.

Konrad Inghelram, a Belgian national, whose training began in France at the Michelin starred Au Chapon Fin, has worked for four different Michelin starred kitchens for a total of six Michelin stars.  Inghelram hails most recently from the UK where he ran some of London’s finest dining venues including Quaglinos, Browns and the Georgian restaurant at Harrods. Inghelram has also collaborated with the legendary Albert Roux for menu and concept development for the Sofitel St. James in London and on board Cunard’s legendary QE2. Inghelram brings a fiery passion for food and strong leadership skills to steer Conrad Koh Samui’s culinary offerings to elevated heights.

Joe Diaz, a US and Spanish citizen, has worked some of the world’s finest kitchens that would be the envy of most chefs more than twice his age. A graduate of Le Cordon Bleu Academy and named Best Young Chef of the Year 2006 in Spain, Diaz has worked in five different Michelin starred restaurants for a total of 12 Michelin Stars. The list of kitchens and Chefs that he has worked in is a veritable “who’s who” of the culinary world under superstars such as Ferran Adria at El Bulli in Spain, Alain Ducasse at Plaza Athenee in Paris, Thomas Keller at French Laundry in California, Nobu Matsuhisa at Nobu in Florida, and Sergi Arola at La Broche in Madrid. Diaz brings a prodigious creative flair to his cooking and cuisine that provides a distinctive touch.

Inghelram and Diaz will spearhead Conrad Koh Samui’s offering of meticulously prepared food choices within the resort’s three conceptual restaurants. Ranging from casual and contemporary to formal and traditional dining, each restaurant also has its own spectacular view across the Gulf of Thailand.

The all-day restaurant, Zest, will tantalise the palate with Mediterranean influenced cuisine cooked from exciting live action stations. The cliff-side specialty restaurant Jahn will also feature the finest ingredients infused with Thai flavours and preparations to delight the senses.  The pool-side open-air casual restaurant Azure Bar and Grill will cater for casual dining in a beautifully landscaped garden setting.

Located on the secluded south-west tip of the popular island of Koh Samui, Conrad Koh Samui features 80 freestanding pool villas, comprising 65 one-bedroom villas, 14 two-bedroom villas and a Royal Villa, integrated within 25 acres of dramatic cliff-side and tropical landscapes.
